FIRE is Kihavah's over-water grill, sheltered under a sculptural cuttlebone dome, where Japanese teppanyaki meets a Peruvian-Nikkei streak — tiraditos, ceviches and Peruvian-style tacos sit alongside nigiri, maki and the teppan counter. The headline act is the wagyu programme, topped by Japanese Miyazaki A5; the easiest way in is the seven-course FIRE Signature Kaiseki set.
