Origin is Hilton Amingiri's over-water fine-dining seafood restaurant, built on "Seafood at its Best" and three pillars — sustainable sourcing, ageing and reduced waste. It runs two narrative tasting menus (a lobster journey and a snapper journey) alongside an à la carte of caviar, raw plates and grilled local fish, blending traditional and modern technique.
