Saoke is JOALI's over-water Japanese restaurant, designed by acclaimed Tokyo architect Noriyoshi Muramatsu around hand-chosen stones and tabletops. Multi-Michelin-starred chef Hidemasa Yamamoto leads a kitchen that ranges across traditional sushi and sashimi, charcoal robata, interactive teppanyaki and JOALI's own Nikkei cuisine. Signature plates include the miso-marinated, bamboo-leaf-wrapped Sumiyaki Black Cod and a robata-grilled whole Maldivian lobster. Teppanyaki set dinners can be arranged on request, and the head sommelier pairs a sake recommendation to each dish.
