Conrad Maldives Rangali Island · The world's first undersea restaurant, five metres below sea level

Ithaa is the world's first all-glass undersea restaurant, set five metres below sea level beneath a 180-degree coral panorama. Lunch is a four-course set and dinner a seven-course degustation, both designed by Director of Culinary Richard Cross and his team. A mid-morning champagne "visiting hour" of canapes is also offered.

Lunch — 4-course set menu

  1. Amuse Bouche: Yellowfin Tuna — Salmon, tomato, avocado, creme fraiche
  2. Appetizer: Duck Croustillant — Vacherin, herbs, red currant, capers, quail egg
  3. Cleanse: Lemongrass Sorbet — Lime, coconut
  4. Main: Maldivian Lobster Tail — Potato, fennel, apple, chicory, lobster, onion, squid
  5. Main (alternative): Mayura Wagyu Beef Tenderloin (Marble Score 8+) — Potato, onion, tomato, eggplant, zucchini, mushrooms, red wine
  6. Dessert: Hazelnut Chocolate Parfait — Berries, mango

Dinner — 7-course set menu

  1. Aperitif: Local yellowfin Maldivian tuna — Tapioca, avocado, creme fraiche, Sevruga caviar
  2. Amuse Bouche: Pan-seared scallop — Chardonnay, carrot, asparagus, cherry tomato, sakura mix
  3. Appetizer: House-smoked New Zealand lamb cutlet — Maple honey, cauliflower, edamame, red wine
  4. Entree: Tomato consomme — Sweet basil
  5. Palate Cleanser: Dragon fruit sorbet — Vanilla
  6. Main: Wagyu beef pithivier — Shimeji, Sarawak pepper, truffle, watercress
  7. Main (alternative): Miso-glazed black cod — Butternut pumpkin, macadamia nuts, minted green pea, fish bone brun, micro herbs, petals
  8. Dessert: Grand cru chocolate parfait — Sable Breton, praline, raspberry confit, berries

  2. Canape: Sous Vide Maldivian Lobster with Mango Salsa
  3. Canape: Beef Tataki with Garlic Chips and Yuzu Dressing
  4. Canape: Cornmeal Torte, Tomato Jelly, and Goat Cheese

Know before you book

  • Lunch is a 4-course set (~$220pp), dinner a 7-course set (~$330pp), plus a mid-morning champagne 'visiting hour' (~$85pp) — all ++taxes; confirm at booking.
  • Seats just 14 guests, so advance reservation is essential and the room books out well ahead.
  • Both set menus offer a choice of main course (Maldivian lobster or Mayura wagyu at lunch; wagyu pithivier or miso black cod at dinner).
  • All produce is prepared where allergens are present — flag any allergies or dietary needs to the management team when you book.
