The Maldives chapter of Chef Dharshan Munidasa's Nihonbashi, the Colombo institution that ranked on Asia's 50 Best Restaurants from 2013 to 2018. The kitchen champions the hero ingredient with no chemical taste enhancers, buys whole tuna, keeps Maldivian lobster in a live tank, and refuses fake wagyu — using only A4/A5 Japanese beef. Expect sushi and sashimi, donburi, tempura, teppanyaki and a celebrated Olive Oil Kake Tai Cha.
